Amish Wheat Bread for Bread Machine

Ingredients
Water, warm, 18 tablespoons1 pkg active yeastWhole Wheat Flour, 2 3/4 cupsSalt, 1/2 tspGranulated Sugar 1/3 cupCanola Oil, 1/4 cupEgg, fresh, 1 large
Directions
First place warm water, sugar and yeast in the machine. Let sit for 8 minutes or until it foams. Then place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Basic Bread cycle and if you can choose how dark or light choose light setting; press Start.

When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

Serves at least 12

    It makes great rolls too! Let rise once in machine, Divide dough into 12 pieces, roll into balls and let rise on cookie sheets. Brush with egg white and sprinkle with salt and garlic powder, bake for 15 minutes at 350 Makes a great sandwich bun. - 1/29/10

    The flavor, light texture and thin crust of this bread is awesome!! I accidentally overlooked the first two sentences and didn't pre-mix. I just put the water, sugar, egg, salt, and oil in the machine and then put the flour and yeast on top. I did stop the machine and start over as instructed. - 7/18/09

    I made this using my kitchenaid mixer and letting it rise normally. I did allow 3 rise sessions before baking @ 350degrees for @ 30 minutes. I also added 4 tsps of vital wheat gluten and sifted the flour first before mixing up the dough.

    18 tablespoons is NOT 6 ounces, it is 9 ounces (1 cup + 2 tablesppons). A tablespoon is half an ounce, two tablespoons is an ounce, and 16 tablespoons is a cup (8 ounces). - 11/26/17

    I doubted the recipe (as did many people), but adding that extra cycle by turning the machine off made an amazing difference.

    So good! After reading the comments below, I increased the salt to 1 teaspoon.

    Also, I'm vegan, so I substituted the egg with a flax and water mixture. The bread was moist, light, and the crust was great! Even after a few days in the fridge, it was still delicious! - 2/16/13

    I was skeptical with the instructions like others, but am glad to be proven wrong! This bread is wonderful! The only things I changed was to add 3 tsp of vital wheat gluten (habit, I add to all my bread machine recipes) and increased to 1 tsp of salt. Very soft, light, wheat bread. Delicious!! - 1/20/13

    If you are having problems with the top collapsing - add 1/2 tsp more salt. Salt helps stabilize the yeast. - 5/25/11
