Carrot Bran Muffins

Wheat Bran- 1/4 cupOats, Whole Grain, Ground- 1/2 cup Flour, White- 1/2 cupBaking Powder- 1/2 tspSalt- 1/8 tspCinnamon- 1 tspCarrots, Shredded- 1 cupEner-G Egg Replacer- 2 servingsCottage Cheese, Lowfat- 1/4 cupSugar- 3/4 cupApplesauce, Unsweetened- 1/4 cup
Preheat oven to 400*
Mix dry ingredients together first (including salt and cinnamon).
Beat egg substitute in med bowl.
Add Sugar, Applesauce, Cottage Cheese to Egg and mix.
Add carrots and dry mixture and mix on high for about a minute.
Grease muffin tin (or use cupcake liners) and put batter in.
Bake for 20-25 min.
