1/4 cup Olive Oil2/3 cup chopped onion1 1/2 TBS Chopped Garlic2 cups canned Crushed tomaotes2 1/2 chopped capersdiced zucchinidiced yellow squash2Tbs chopped freash basil1tbs chopped fresh parsleysalt and pepper to taste
Heat Olive oil in pot. add onion,saute until softened,5-7 minutes. Add garlic; cook 2 minutes. Add crushed tomaotes, black olives and capers; cook for 15 minutes. Add zucchini and squash; cook until squash is tender. Add herbs and season to taste.
Serve this over pasta if you wish.
