1lb frozen shelled edamame3 cups frozen corn kernels1 chopped red bell pepper3/4 cup sliced green onion1/2 cup finely chopped red onion1/4 cup chopped fresh Italian parsley2 Tbps chopped fresh oreganoDressing1/3 cup fresh lemon juice2 Tbsp Dijon mustard2Tbsp olive oil3/4tsp salt3/4tso fresh ground black pepper
Prepare edamame according to package instructions. Drain and rinse in cold water. Combine edamame, corn, bell pepper, green onion, red onion, parsley and oregano.
In large bowl whisk lemon juice, mustard, olive oil, salt and pepper. Add veggies to bowl and toss to coat. Refrigerate.
