Zuccini Gratin

Ingredients
Zucchini 2 cups, slicespepper to taste1/4 cup Parmesan cheese1 tablespoon butter, melted
Directions
Preheat oven to 400

1. Spray small casserole dish with pam.

2. Microwave slices zucchini for 3-5 minutes.

3. Arrange zucchini in overlapping pattern in dish.

4. Season with pepper and sprinkle with cheese.

5. Bake uncovered for 30 minutes or until zucchini is tender.

6. Increase temp to 475 and drizzle on melted butter and bake for 10 minutes more until top is golden brown.

    I added a little bit of garlic to the butter and used Brummel & Brown instead of butter for a little extra savings on the calorie count. Forgot to microwave it and turned the heat up a tiny bit more. VERY tasty, though. - 10/16/09
