Homemade Pancakes

Ingredients
Directions
1 egg1 cup all purpose flour3/4 cup milk2 TBS Shortening melted or canola oil1 TBS sugar3 tsp baking powder1/2 tsp salt1/2 cup fresh or frozen blueberries (thawed and well drained.)
Beat egg with hand beater until fluffy; beat in remaing ingredients just until smooth. For thinner pancakes, stir in additonal 1/4 cup milk.
If you want blueberries add them now.
Grease heated griddle if neccessary. (To test griddle, sprinkle with few drops water. If bubbles skitter around, heat is just right.)
Pour about 3 TBS batter from tip of large spoon or from pitcher onto hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown.
About nine 4-inch pancakes. Serves 3 adults.
