Blackened Catfish with Mango Salsa

1 tsp. olive oil8 oz. catfish filet (2-3 frozen filets, thawed in the refrigerator work perfect!)2-4 tsp. cajun seasoning2 tbsp. D.L. Jardine's Mango Mariachi Salsa (or another fruit salsa)1/2 tbsp. sour cream, reduced fat
Heat olive oil in frying pan over med-high heat.
Rub cajun seasoning on both sides of filets (more if you like it spicier, sparingly if you like it mild)
Place filets in frying pan and cook (turning once) until outside is blackened and center is opaque and fish flakes easily.
3-5 minutes on each side usually is enough. (Cover pan if filets are thick so that the center cooks thoroughly.)
Top with salsa and sour cream and serve immediately
