Braised Endive

Ingredients
4 medium heads endive, trimmed1/2 cup Chicken Broth1 TBS lemon juice2 tsp chopped parsley (dried works fine too)1/4 tsp grated lemon zest1/4 tsp salt1/4 tsp freshly ground pepper
Directions
Preheat oven to 350. Arrange the endive in a baking dish; add the broth and lemon juice. Cover with foil and bake until fork-tender, about 25 minutes. Remove foil; bake 5 minutes longer. Serve, sprinkled with the parsley, lemon zest, salt, and pepper.
