Quick Turkey Shepherd's Pie

Ingredients
1 lb Ground Turkey1 can Cream of Chicken Soup2 cans Mixed Vegetables (about 2 cups)1 Tbsp Garlic Powder1 pkg Roasted Garlic Mashed Potatoes, instant
Directions
Brown ground turkey and drain. Stir in cream of chicken soup, mixed veggies, and garlic powder. Put into a 3 qt casserole dish.

Prepare instant mashed potatoes according to box directions, then spread on top of casserole.

Bake for 20 minutes, or until all is heated through and potatoes on top start to brown.

Makes about 8 1/2-cup servings.

    Added frozen peas, TVP, fresh rosemary, cumin, paprika, cayenne, salt & pepper. Sprinkled paprika on top of the mashed potatoes. Baked at 350 then turned off the oven and left it for an hour (waiting for my wife to get off work). Was yummy, all had seconds. - 7/3/14

    I would make a turkey cottage pie using a gravy made from stock instead of creamed soup. Then add loads of veggies along with. This is a good starting point though. - 1/8/10

    When I made this I used lean hamburger meat and cream of mushroom soup. Also instead of the canned veggies, I mixed in frozen carrots (dethawed), fresh spinach, minced red bell pepper, & diced onion. I also topped it off with some cheese. This was a great idea for a meal - I'll be making this alot!! - 6/20/09
