  • Number of Servings: 2
Ingredients
1 can plain black beans (like Goya)1 t. olive oil1-2 cloves garlic, minceddried thymered pepper flakescurry powder
Directions
In a non-stick skillet on med-high heat, add olive oil and garlic, cook 1 minute or until garlic sizzles a little -- do not let garlic brown.
add entire contents of black bean can -- all juices!
add spices as desired. Cook over medium heat for about 10 minutes, or until much of the liquid is cooked off and the black beans are in a thick sauce.
That's it! Great with brown rice, or served with a side veggie like broccoli (the sauce from the beans means you need no other condiment on the veggie!)

Corn is another entertaining additive - just chucked a cup of frozen kernels in with the beans. Yum yum! - 1/17/08

I was looking for something quick to go with my grilled chix and rice tonight. This was awesome on top of the rice. My family at every last bite so I don't even have leftovers for tomorrow's lunch. - 4/3/07

This was very good and I will make it again. The only thing I didn't like was that there were no amounts for the spices and our beans came out a little too spicy. Next time I'll know not to be son generous :-) - 5/31/09

The sodium level in this recipe cannot possibly be right. Even the low sodium Goya would have a lot ore than 4.2mg! - 5/28/14

Loved this! I'm a curry addict, so I was psyched to try it out in black beans. Didn't have any thyme, but I added in some salt-free lemon pepper for a little added flavor. Threw in some broccoli at the end! - 6/10/10

This was a very good recipe. I served it with chicken, whipped sweet potatoes, and spinach salad. I will definitely make this again and add corn to it and serve with brown rice like some of the other reviewers. - 5/9/10

That sodium can't be right considering it is canned beans. - 8/25/09
