Ingredients
Sesame Oil1 can coconut milk1.5 cups vegetable brothLaksa Paste3 oz Shrimp1 onion, sliced into rings1 carrot, sliced in thin stripsCucumber, sliced in thin strips (lengthwise)Mushrooms, slicedFried tofu, cut into cubesHokkien noodles
Directions
Soften onion in sesame oil. Add shrimp and cook (can substitute meat with others). Add laksa paste, stir and cook until fragrant. Add coconut milk and vegetable broth. Warm, then turn off. Slice vegetables. Put noodles in a strainer and pour boiling water over them. Place handful of noodles into serving bowls. Add vegetables to broth, and bring to simmer for 2 minutes. Pour soup over noodles, and serve.
