For the cucumber salad : combine the cucumbers, onions, dill, lemon juice and olive oil in a large mixing bowl, season to taste with salt.For horseradish sauce: combine the horseradish and sour cream in a small bowl and season to taste with salt and pepper.For Salmon:1. Preheat grill to medium-high2. Brust the salmon filets with oil and season with salt and pepper.3. Grill the salmon until it is just cook through, about 5 minutes on each side.4. Serve the salmon with a dollop of horseradish sauce and a large spoonful of cucumber salad.
Yields 4 servings - 1 filet and a large spoonful of salad.
