Stuffed Green Pepper Soup

Ingredients
1 lb. lean ground beef2 green bell peppers, diced2 cans diced tomatoes (make one Italian style for extra kick)2 cans tomato soup1 can beef broth1-1/2 cups rice (NOT Minute Rice)Seasonings to taste:Garlic powderOnion powderNature's SeasoningSaltPepper
Directions
Brown meat & drain well. In a large pot or Dutch oven, combine all ingredients EXCEPT RICE. Cook over medium heat for 1/2 hour, stirring occasionally.

Stir in rice. Simmer over low heat for an additional hour.

    Works well as a cassarole when you put the uncooked rice into the soup. Did not realize to cook rice first. I served with shredded cheese on top. My family loved it. Next time I will try with pre-cooked rice - 11/6/08

    Made this tonight! Only had 1 green and 1 yellow peppers, so I used both of them. It turned out FANTASTIC! My husband just LOVES it! Says it's one of his faves, and he's not even TRYING to eat healthy! He also says that Frank's Red Hot extra hot sauce REALLY compliments it! Not for me though. - 11/4/08

    Yummy! I used ground turkey and onion soup instead of beef broth. It turned out well. I did cut all the measurements in half because it's just two of us. Thanks! - 10/4/08

    I made this today I used chic broth in place of beef(didn't have any of the other) and when I browned the meat, I sauteed 1/2 onion with it.
    Was really good, made a ton!!!
    Next time I think I will only use 1 can of tomato soup and use 1 can of tom sauce in place(a little to Campbells tasting for - 10/3/08

    It's really yummy - I love this recipe! You can absolutely use brown rice, and I bet it would be awesome that way! About the number of servings... I had no idea what to put since serving sizes always vary, but we always have so much left over that we freeze some! I hope you enjoy it. : )

    This made it better for us: 1 lb.of ground turkey breast; 6 GB peppers;6 cns no sod.diced tomatoes; 6 cns low sod.beef broth; 4 cns low sod.tom. soup; sautee gr. turkey, 2 lg. diced onions, 6 cloves minced garlic, oregano + basil. Add all but rice.Cook brown rice; add after soup is cooking hot. Mmm - 1/13/12

    Loved this soup and it was super easy to make. I was going to mention that I had to add quite a bit more liquid to this recipe. Just read that you were supposed to add 1 1/2 cup COOKED RICE! I added uncooked...no wonder I had to add so much more liquid. Oh well, it was delicious! Will make again - 10/1/11
