Mango Black Bean & Green Onion Salsa

1 mango, peeled and coarsely chopped1 cup cooked black beans, or canned beans, rinsed and drained2 green onions, finely sliced1 tablespoon serrano/jalepeno pepper, seeded and finely diced1/4 cup fresh lime juice2 tablespoons olive oil2 tablespoons honey1/4 cup chopped cilantro (if dried, then 1 tbsp)Salt and freshly ground pepper, to taste
1. Peel and chop the mangos
2. Rinse and drain canned black beans
3. Finely slice scallions
4. Seed and finely dice the hot pepper
5. Squeeze limes
6. Mix together in a bowl; add salt & pepper to taste
Serve over rice or as a side dish.
