Classic Molasses Cookies (vegan)

Ingredients
3/4 cup Earth Balance buttery spread, melted1 cup brown sugar1.5 tsp Ener-g egg replacer (mixed in 2 TB water)1/4 cup molasses1 cup whole wheat flour1 cup white flour1.5 tsp baking soda1/2 tsp salt2 tsp ground cinnamon3/4 tsp ground cloves3/4 tsp ground ginger1 tsp vanilla extract1/3 cup sugar, kept separate (I used raw)
Directions
Makes 32 cookies

Mix "butter", sugar, vanilla, and egg replacer until creamy. Stir in molasses until the color is uniform.

In a separate bowl mix flour, soda, salt, cloves, ginger, and cinnamon. Blend flour mixture into molasses mixture.

Chill dough in the freezer for 1 hour.

Roll dough into walnut sized balls, then roll in separate sugar. Place on ungreased cookie sheet.

Bake at 375 degrees for 8-12 minutes. Watch the cookies closely after 7 minutes and remove once tops are cracking.
