Roasted Vegetable Medley

Ingredients
2 garlic cloves1 large carrot thickly sliced1/2 cup sliced zucchini1/2 cup sliced summer squash1/2 cup sliced cauliflower pieces (1 inch)4 slices onion1 TBsp olive oilkosher saltfreshly ground black pepper
Directions
Preheat oven to 400 degrees.

Place vegetables on a cookie sheet. Drizzle 1 olive oil over vegeatable. Stir with a spatula. If vegetables look dry - spray some canola cooking spray on vegetables. Season with kosher salt and freshly ground black pepper.

Bake for 20-30 minutes - stirring vegetables twice.
