Creamy Brocolli Potato Soup

I large potato cubedI cup carrot choped2 cups brocolli chopped1/4 cup celery chopped1/4 cup onion chopped1/2 cup Nonfat milk1/4 cup cheddar cheese shredded4 cups water4 chicken boulion cubespepper to taste
Cook potato, carrot, brocolli, onion, and celery in water until tender. Remove 1/2 cup of mixture and mash, add cheese and milk. Return to pot. Add bullion cubes and pepper. Simmer for 10 minutes.

i loved this recipe, it was so easy (quick)and so so YUMMY, my two year old LOVED it, she ate two bowls and she is a very picky eater.... I would recommend this to anyone, i recommended it to her daycare!!!!!!!!!!!!! We also ate ours with the Hawiian style bread, she loved dipping the bread in it... - 9/1/09
