1 cup splenda brown sugar blend1 1/4 cups rolled oats 2 cups whole wheat flour 1 1/2 teaspoons baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon pumpkin pie spice (heaping) 6 tablespoons applesauce 6 tablespoons pumpkin puree (if using homemade, make sure it is thick like canned) 2 egg whites 3/4 teaspoon vanilla extract 1/2 cup dried cranberries
Directions
Bake at 350 for 10-12 minutes

    The recipe calls for 1 c. of Splenda Brown Sugar blend, but the nutritional information is for a 1/2 cup. If you use the entire cup the calorie count should be around 180 calories for each cookie. - 10/26/08

    These cookies are yummy! Would definitely make them again! Although, I had to fiddle with the amount of dough per cookie in order to get the 14 servings and keep them at 140 calories each. Thinking about putting some protein powder in the dough to add some more protein... - 9/23/08
