Ali's Vegetable Soup A

Ingredients
Onions, garlic, carrots, cauliflower, aduki beans, chicken and wine broth.
Directions
Makes 8 cups, approximately 2 cups per serving.

In a stew pot brown 1 diced onion and 2 cloves of garlic in a couple tablespoons of olive oil. Add sliced or diced carrots. Add broth. Add cauliflower florets. When carrots and cauliflower are al dente, gently stir in aduki beans. I used canned organic aduki beans for this recipe, but you can soak your own the day before but the cooking time will be considerably longer and I recommend cooking the beans separately and adding them at a short while before you are ready to serve. Gently stir in the beans, they are delicate.
