Marinated Tuna Steak with Chilli & Lime Salsa

2 tbsp olive oil1.5 whole limes 1 tsp garlic2 medium chillies (finely chopped)1.5 tsp corriander (finely chopped)25 g courgette (diced)0.25 large yellow bell pepper (diced)3 red ripe italian tomatoes (chopped)250 g sliced greens
makes 2 sevings
1. Marinade:
Grate the rind of 1 lime into a container (suitable for marinading the tuna steaks).
Squeeze in the juice of 1 lime.
Add the garlic, 1 large tsp corriander, 1 tbsp olive oil, 1.5 of the chillies and mix well.
Add the tuna steaks to the marinade, make sure they are well covered.
Leave for 30 min - 1 hour.
2. Salsa:
Add the rind and juice of the remaining 0.5 lime into a bowl along with the remaining olive oil, chilli and corriander.
Add the courgette and peppers and mix well.
Refrigerate.
3. Cooking:
Steam the greens (for around 10 mins) or if prefered - boil in a pan (around 5 mins).
Once cooked add the chopped tomatoes ( the heat of the greens will heat up the toms).
In the meantime cook the tuna in a skillet for 3 mins each side. (the centre of the tuna should be pink/opaque). Could also use a George foreman grill which reduces cooking time by half!
4. Serve:
Lay the tuna steak on top of the greens, spoon over the salsa and enjoy!
