Black Chana Masala

Ingredients
Black Chana - 4 cups soaked overnight10 roma tomatoes1 tbsp canola oil2 large red onion1 tbsp cayenne pepper powder2 cloves garlic4 inch ginger rootsalt to taste
Directions
Soak chana overnight. Cook in a pressure cooker till soft. In a sauce pan heat oil, saute onions, ginger, garlic, add cayenne pepper, salt & boiled chana. Bring to boil. Then cover and cook on low heat for 4-6 hrs. Occasionally stir. Cook until the chana is quite soft and has absorbed all flavors.

Serve with rice.
