Homemade Turkey Sausage

2 pkgs extra lean ground turkey breast1 tsp black pepper4.5 tsp Italian Seasoning (not the dressing)1/4 tsp red pepper flakes1/4 tsp cayenne10 grinds 20 grinds fresh ground pepper3/4 tsp salt1 T Olive oil 3/4 cup applesauce, unsweetened
Mix ingredients together.(I use my hands)
Divide the sausage mixture into 4 equal portions in the bowl.
From each portion, make 2 - 4 oz patties if using for burgers and 4 - 2 oz patties if for breakfast
Coat a large nonstick skillet with cooking spray. Place over medium-high heat.
Cook patties 4- 6 minutes on each side (Do not overcook or they will be dry.)
Serve on a bun or with scrambled eggs and toast.
A serving is 4 oz.

I added 4 thin slices of minced taylor ham to and it was the bomb. the taylor ham just gave it that zing and wonderful smoked flavor you want in a breackfast sausage sandwich. Nice way to start my day on an english muffin thin slice of cheese, makes me ready for anything the day would bring. - 4/17/11

I made this a couple of nights ago. I used half of the mixture for burgers and it was ok but it didn't taste much like a burger. I used the other half to make sausage for breakfast, the next day and had it with scrambled eggs and it was awesome. I like it much better as a sausage than as a burger - 11/25/08
