1 pound small red potatoes1 tablespoons olive oil or vegetable oil1/2 teaspoon salt1/8 teaspoon pepper2 tablespoons grated Parmesan Cheese
Cut the potatoes into 1/4 thick in slices; toss in oil. place in a single layer in a greased 13 in x 9in x 2 in baking pan. sprinkle with salt, pepper and parmesan cheese. cover tightly with foil. Bake at 350 degrees for 40 minutes or until tender. 4 servings
