Rustic White Bean Soup with Sausage and Kale

Ingredients
Chicken BrothItalian SausageCannellini Beans (or Borlotti Beans)KaleCanned TomatoesOrzo PastaOnionsGarlicSageBorage, 1 T minced fresh (if you can find it)Thyme
Directions
Saute chopped onion in olive oil at medium heat about 10 minutes. Add chopped garlic and saute for a few more minutes. Add sausage sliced into 1/4" rounds. Saute for 5-10 minutes, making sure the sausage is browned on all sides. Watch the heat to keep the onion from burning. Add minced sage, thyme, & borage with the Canned tomatoes. Break tomatoes up into smaller pieces with spoon. Add chicken broth and Cannellini Beans and bring to a boil. Then add Kale, cover, and cook for 20 minutes on low heat.

Optional:
Serve over crusty Sourdough Bread that has been rubbed with garlic and a little olive oil and toasted in the oven at 400 F.

Sprinkle with parmesan cheese on top.
