Quick, Healthy Veggie Pattie Lunch

Ingredients
2 Veggie Patties2 Tbsp plain nonfat yogurt2 Tbsp hummus1/4 cup diced tomatoes1/4 cup diced red onion1/4 of a whole avocado diceddash of pepperdash of salt
Directions
You cook the veggie patties according to package instructions.
chop your vegetables. When the patties are finished spread the yogurt on one patty and the hummus on the other. Put all the veggies on top of patty with the yogurt and sprinkle with salt and pepper. Take the patty with the hummus on it and flip it over and atop the veggies on the other patty. (basically make a sandwich with the patties as the bread).
I make this as my lunch almost every day. I buy the patties in bulk. Since you only use part of the veggies, a single tomato, avocado, and onion can last you 3 to 4 days. It tastes so good after my workouts and it's very filling and full of nutrients.
