Ingredients
1 cup shredded carrots1 cup chopped onion1/2 cup chopped celery3 cups fat free canned chicken broth1 pound browned, crumbled ground turkey 93% lean2 cups cooked brown rice3 cups skim milk8 oz. cubed Velveeta light1 cup reduced fat sour cream
Directions
In a large saucepan bring carrots, onion, celery and broth to a boil; reduce heat and simmer 15 minutes or until veggies are tender. Add browned beef, cooked rice, cubed cheese and milk; simmer until cheese is melted(do not boil). Just before serving whisk in sour cream. 10 servings

    This was GREAT!! Tweeked the recipie. didnt use carrots or celery, instead 1/2 bag spinach. used lean hamburger meat and added jalapeno. didnt add the milk - its expensive and it turned out just fine w/o it; i feel it would have been too liquidy with the milk. i see this as being a thicker soup? - 1/31/12
