Vegetarian French Onion Soup

Ingredients
4 cups vegetable broth1 large sweet onion1 tbsp soy saucedash thymedash rosemary4 slices bread, cubed and toasted into croutons
Directions
Caramelize onions, about 10 minutes. Add in remaining ingredients and heat through. Serve with homemade croutons sprinkled over the top!
