Ingredients
1 medium cauliflower, broken into florets3 baking potatoes, peeled and diced3-4 roma tomatoes, diced, or canned tomatoes, choppeda handful of chopped cilantro1 tbsp toasted ground cumin1/2 tbsp red chili, such as ancho1/2 tsp cayenne pepper1 tbsp garam masala
Directions
heat oil in large skillet, add diced potatoes and brown on all sides
stir in red pepper & cayenne
add cauliflower florets and a 1/4 cup water, cover and let cook on med-low heat
add cumin & tomatoes, continue to cook until cauliflower & potatoes are tender and most of the moisture is reduced.
add garam masala cook 1-2 minutes

garnish with chopped cilantro
