Rice n' Beans with Bacon

1 slice bacon1/4 c chopped onion1/2 canned kidney beans, drained1/4 c vegetable brothsmall tomato, choppeddash of tabasco sauce3/4 cooked brown ricefresh cilantro
Chop and cook bacon over medium heat until crisp; drain and wipe out pan with paper towels. Return bacon to pan; add chopped onion; saute 5 mintues. Stir in 1/2 c drained kidney beans, vegetable broth and chopped tomato, add a few drops of tabasco sauce. Cover and simmer 10 minutes, stirring occasionally, until mixture is slightly thickened. Serve over steamed brown rice (or white rice). Garnish with fresh cilantro.
