TURKEY MEAT (LEAN)4 GREEN OR RED PEPPERSONION (HALF)BROWN RICE (COOKED) .5 CUP 1 TBLSPN OREGANO1 TBLSPN PARSLEY1 EGGSALT TO TASTEPARMESAN CHEESE (TO TASTE)TOMATO SAUCE (HOMEMADE OR STOREBOUGHT) A LARGE JAR WOULD BE FINE
Pre-heat oven to 400. Take peppers and cut a hole around the stem and scoop out seeds. ( if you like your peppers soft like me you can rub some olive oil on them and put them in the oven for 10 min by themselves to soften them). heat some olive oil in a pan and toss in your chopped onions til slightly browned. in a bowl combine meat, onions, and all other ingredients beside sauce. Stuff peppers with mixture (try not to pack them too tight) bake for 25 min. flipping once. then cover peppers with sauce, enough to cover bottom of dish. cover with aluminum and finish baking for another 20 min . top with low fat mozzarella if you'd like)
