Garlic Parmesan Mashed Red Potatoes

Ingredients
2 lb uncooked red potaotes, unpeeled, quartered2 cloves garlic minced 1 1/3 tbsp Smart Balance Light Margarine 1/3 cup 1% low-fat milk 2/3 tsp table salt 1/4 cup grated Parmesan cheese
Directions
Clean and quarter potatoes. Place potatoes and 1/2 of the garlic in large pot. Cover with water and bring to a boil. Once water is at a boil, reduce heat and simmer 25 minutes until tender.

Drain Well

Mash potatoes with butter, milk, salt & remaining garlic.

Stir in parmesan cheese & Enjoy!!
