healthy harvest bread

Ingredients

3 eggs1 c oil1 c honey1 T vanilla2/3 c shredded carrot2/3 c shredded zucchini2/3 c shredded apple2 c flour1 c flaxseed meal [if not available just use flour]1 t baking powder1 t baking soda1 t salt1 1/2 t cinnamon1 t ginger1/2 t nutmeg1 c chopped nuts [i used pecans]
beat eggs.
add oil, honey and vanilla
stir in apple, zucchini & carrot.
in seperate bowl, mix the dry stuff.
add to wet stuff until just moistened.
fold in nuts.
for muffins, put approx 1/4 c batter into each cup. bake around 20 minutes or until done.
for loaf of bread, grease pan.
im not sure how long i baked mine for, i kept adding minutes to the timer until it was done. im guessing it was around an hour.
if the edges start to burn, cover it and reduce the temperature some
