Cheddar Topped Shepards Pie

Ingredients
4 meduim potatoes peeled and thinly sliced around 2 lbs1 cup frozen Green Beans 5 carrots sliced1 meduim onion chopped1/4 cup flour1/4 cup tomato paste1/2 tsp thyme1 lb lean turkey 93/7 ( can also use ground beef)3/4 cup nonfat milk1 cup reduced fat shredded cheese1 cup watersalt & pepper to taste1 tblsp oil
Directions
preheat oven 450 degrees

place potatoes in large pot with water bring to boil and cook

while potatoes are boiling

heat oil and saute carrots,onions , green beans and thyme til tender 8-10 minutes add tomato paste and flour cook stirring 1-2 minutes add ground turkey cook until no longer pink add 1 cup water and bring to a boil and allow to thicken

drain potatoes and return to pan over low heat cook until potatoes are dry remove from heat add milk and 1/2 cup cheese stir and mash

spray a casserole dish with cooking spray add meat filling top with potatoes sprinkle with remaining 1/2 cup cheese and bake 20-25 minutes

serves 8
