Oriental Rice Salad (cold)

3 c. brown rice, cooked and cooled1/2 c each of onion, pepper and mushrooms chopped fine.1 pat of butter for saute'1 c of water chestnuts also chopped fine.dressing is 1 Tbl each of veg. oil and soy sauce. 2 Tbl of Tahini, or toasted sesame seeds as an option.Garlic powder, salt and pepper to taste.
Cook and cool brown rice. I mix stock and water for base flavoring my rice.
Saute onions, peppers and mushrooms in butter til tender. Add chopped water chestnuts. Want more veggies? add snow peas, broccoli, asparagus or anything else that will cook quickly and be okay to eat cold.
Remaining ingredients go in a small bowl and whisk together.
Combine rice, veggies and dressing, mix well and return to fridge for about an hour. Serve chilled. Makes 5-6 one cup servings.
