South Indian Lemon Rice

Ingredients
1 cup uncooked basmati rice1 cup lemon juice1/2 cup raw peanuts1 tsp urad dal1 tsp chana dal2 tbsp canola oil1/2 tsp turmericsalt to taste1 tsp black mustard seeds
Directions
Cook the rice in a rice cooker (left over rice can also be used). Heat oil in a pan, add the mustard seeds, let them splutter then add urad dal, chana dal peanuts, sliced green chillis. Let the dals brown slightly then add the rice, salt & lemon juice. Mix well and turn off the heat, Garnish with coriander leaves & serve warm.
