Ingredients
Zucchini, 4 cups, sliced Chick peas 4 cupsOnions 1 large Mushrooms, fresh, 2 cup slices Sharwood's Mild Curry Paste - 1 jar (255ml)Spinach, fresh, 1 package (10 oz)
Directions
Cut up onion, zucchini, and mushrooms. Saute in a little olive oil. Drain chick peas and save the liquid. Mix 3/4 of the liquid with the curry paste. Add chick peas and curry sauce to veggies. Add 1 large bag of fresh spinach to mixture and cook about 20 - 30 minutes.
