Cabbage & Ham Potee Soup

Ingredients
2 tablespoons butter1 cup chopped onion3 cups carrots2 cups celery4 cups shredded cabbage2 cups diced potato1 tablespoon fresh thyme2 teaspoons minced garlic1 cup diced ham6 cups chicken broth
Directions
Melt the butter in a large Dutch oven saute carrots onion, & celery for about 5 minutes add garlic and thyme saute for another 2 minutes add the remaining ingredients simmer for 30 minutes
Makes 8 1 1/2 cup servings
