Broccoli with two-cheese sauce

1 c. ff milk1/2 c. sliced onion2 garlic cloves, crushedDash of ground nutmeg2 Tbsp. flour1/3 c. (about 1.5 oz) grated fresh Parmigiano-Riggiano cheese 1/3 c. (1.5) oz Jarlesburg reduced fat cheese1/4 tsp saltdash of ground red pepper6 c. broccoli spears
Combine first four ingredients in saucepan - heat over med. heat until simmering (do not boil). Remove and let stand 15 min. Strain solids and reserve the milk. Wipe out the pan with paper towel. Add strained milk and flour to pan and stir with whisk. Return to med. heat and cook 2 min. until thick..stirring constantly with whisk. Keep warm while you cook broccoli until crisp tender. Drain, top with cheese sauce and serve.
