Sarah's banana nut cookies

1/4 cup whole wheat flour1/2 cup oats2 T flaxseed meal1/4 cup wheat germ1/2 t baking soda1/4 t cinnamon1/4 cup brown sugar1 egg white1/2 cup mashed banana (puree if desired)1/4 cup raisins1/4 cup chopped walnuts1 T smart balance light
Preheat oven to 350. Coat a baking sheet with nonstick spray or line with parchment paper. In a bowl, combine the flour, oats, wheat germ, flaxseed meal, baking soda, and cinnamon. Stir to mix.
In large bowl, beat the sugar and smart balance with a wooden spoon til combined, dont overmix. Add the banana and egg whites and stir to blend. Next add the flour mixture, raisins, and walnuts, and stir to combine.
Drop the dough by Tbsp onto baking sheet, leave about 1 inch in between. Bake til golden brown, 12-15 minutes. Let cookies cool 5 min, then transfer to cooling rack.
This recipe is my very much modified version of Jessica Seinfeld's Oatmeal Raisin Cookies in her book Deceptively Delicious, a great book by the way!!!
