Lentil & Barley Soup

3/4 cup chopped onion1/2 cup chopped celery1/2 cup chopped green peppers1 T minced garlic8 cups water1 (14.5 oz.) can diced tomatoes1 small can sliced mushrooms1 cup corn1 cup dry lentils, rinsed and drained1 cup pearl barley8 beef bouillon cubes1T Italian Seasoning1T Dried Parsley
In a large Dutch oven, cook onion, celery, peppers and garlic in cooking spray until tender. Add remainder of ingredients.
Bring to a boil and reduce heat, cover and simmer for 45 minutes.
