1 8oz bag Fiber Gourmet Light Pasta (or other macaroni noodles)3 tbsp Smart Balance Light3 tbsp Flour2 1/4 cups skim milk1/2 tsp salt1/8 tsp black pepper2.5 cups shredded Colby Cheese
Preheat oven to broil.
Cook pasta in about 4 cups of boiling water for about 8 minutes, or until tender, then drain.
Melt butter in 10" oven safe skillet over medium heat. Whisk in flour and continue whisking until bubbly, add milk, salt, and black pepper and stir until the milk begins to bubble. Add Cheese, and then turn off heat, whisk sauce until cheese is melted and the sauce is smooth.
Stir in cooked macaroni noodles, and put the whole thing in the preheated oven for 2-3 minutes until several browned spots appear on the surface. Remove from oven and let sit for 5 minutes before serving. Sauce will thicken as it sits.
