Sausage and Orzo Soup

Ingredients
1 lb. Italian sausage, removed from casing1 cup chopped onion14 cups broth1 (15 oz) can chopped tomatoes10 oz. fresh spinach1/2 cup part skim mozzarella cheese, shredded
Directions
In a Dutch oven or stockpot, cook sausage and onion. Drain and return to pan. Add broth and bring to a boil. Add tomatoes and orzo; reduce heat and simmer for 1 hour or longer. Return to a boil and add spinach; lower heat to medium and cook until spinach is done. Top with shredded mozzarella cheese.
