Sourdough Starter

1 cup water (use bottled or filtered water)1 cup flour (I like to use whole wheat, but any kind of flour works)1 tsp. sugar1/2 tsp. salt1 tsp. yeast (NOT 1 oz. as indicated in ingredients)
Mix starter ingredients in glass crock or bowl, cover loosely and leave at room temp. overnight. The following day, add 1/2 cup flour and 1/2 cup water. Keep "feeding" the starter throughout the week, discarding 1/2 cup starter each time, or when your container starts getting full. At the end of a week, your starter should be activated and ready to use. I love making sourdough bread, and as I indicated in the description, this can be used to make the very best pancakes ever! They are so light and tender, almost like crepes.
