Cabbage & Ground Beef Casserole

1 large onion, chopped1 green pepper, chopped [optional]1 lb lean ground beef1/2 cup rice3 to 4 cups shredded cabbage [depends on your casserole size]1 can tomato soup, undilutedsalt & pepper to taste
Saute onion & peppers [if using peppers] in a bit of oil; add and lightly brown the ground beef and drain off fat.
Add rice to meat. Season to taste. Stir in tomato soup and mix well.
Place shredded cabbage in casserole dish, enough to fill about 2/3 full. Top with the meat mixture.
Bake at 375 degrees for about an hour or till cabbage is cooked through.
