Light 'N Crisp Blueberry Waffles

Ingredients
2 egg yolks2 cups milk2 cups all-purpose flour1 tablespoon baking powder1/2 teaspoon salt1/3 cup oil2 egg whites, stiffly beaten3/4 cup fresh or frozen blueberries
Directions
Yield 8 waffles

Preheat waffle maker. Put all ingredients except egg whites and blueberries in a bowl. Beat until moistened, then mix until smooth on higher speed. By hand fold in egg whites. Fold in blueberries.

Pour 1/2 cup of batter over grills of waffle maker. Close waffle maker, bake until steam no longer escapes. About 3-5 minutes.
