Diced Tomato and Ground Turkey Soup

6 cups low-sodium chicken brothOne 15 ounce can of diced tomatoes1/2 cup cut up green pepper1 small diced onion2 stalks medium celery (diced)3 medium carrots (diced)1-1/3 pound package ground lean turkey1 egg or 1/4 cup egg substitutecrumbled bread crustsalt and pepper to taste1-1/2 tsp. crushed basil1 tsp. ground oregano
1. Heat large pot over medium high heat with chicken broth, can of diced tomatoes, celery, carrots, onion, and green pepper until mixture comes to a simmer.
2. While mixture is simmering, combine ground turkey with pepper, egg substitute, bread, basil, and oregano in a small bowl. Pinch turkey mixture into 50+ teaspoon sized meatballs and drop into the soup mixture all at once.
3. Cover pan and simmer the meatballs for six minutes, until just cooked through. Season to taste.
Makes 8 1-cup servings
