Ingredients
Butter, 1 stickBrown sugar, 1/2 cOats, 1/2 cWhole wheat pastry flour, 1 cPumpkin, 1 15oz canEvaporated nonfat milk, 1 13oz canMilk, 1/2 cCornstarch, 1/4 cCinnamon, 1 tspGinger, 1/2 tspNutmeg, 1/4 tspCloves, 1/4 tspSalt, 1/2 tspSugar, 3/4 c
Directions
Cut butter into flour, oat and brown sugar mixture. Press into greased 11x7 pan and bake at 350 for 15 minutes. Meanwhile, mix pumpkin, milks, spices, salt, sugar and cornstarch with a whisk. Pour pumpkin mixture into baked crust and bake for another 45 minutes or until custard is set.

    This serving size is way too small, so you end up eating at least twice the calories etc, but it tastes yummy. My family makes this every year for Thanksgiving. - 11/9/08
