Fresh Apple Cake

3 cups flour2 cups sugar1 teaspoon baking soda1 teaspoon salt1 teaspoon cinnamon1 cup cooking oil (canola, vegetable)3 well beaten eggs (2 will work but the cake will not be as moist but still very good)2 teaspoons vanilla1 cup chopped nuts (pecan is my favorite)3 cups raw apples (Granny Smith is what I use)
Preheat oven to 350 degrees:
Do not use a mixer:
Mix flour, sugar, baking soda, salt, cinnamon in a large bowl.
Mix cooking oil, eggs, vanilla, nuts, raw apples.
Combine wet ingredients with dry ingredients and mix with spoon/spatuala.
Press into a well greased pan 13 X 9 X 2 will work or a foil pan to go for parties.
Bake for 40 to 50 minutes - when toothpick comes out clean.
Served 20 to 24 for pieces 2" to 1 1/2"
