Vegetarian Lentil Soup

Ingredients
2 cans lentils4-5 cubes vegetable bouillon8 cups water6 stalks celery (diced)4 large carrots (diced)1 bag spinach 1 tbsp black pepper1 clove garlic
Directions
Bring water to boil in a large pot on stovetop
Add boullion to boiling water
Bring broth down to a slow boil and add vegetables, garlic and lentils
Keep on a slow boil for approximately one hour or until vegetables are soft
Add pepper right before serving

    My family absolutely LOVED this soup! I couldn't find canned lentils at my grocery store, so I got dried lentils in a bag and used 280g = 8 serv. I added one more cup of water, & I also added 1/2 c. of flour. I cooked the soup about 3 hours to help it thicken, blend the flavors, and soften the vegs. - 6/19/08
