* Green Peppers (bell peppers), 250 grams * Ground Italian Turkey Sausage, 8 oz * Onions, raw, .5 large * *Del Monte Petite Cut Diced Tomatoes, 0.5 cup * Garlic, 2 cloves * Spinach, frozen, 0.5 cup * Barley, pearled, cooked, 1 cup *Fennel seed, 1 tbsp Oregano, ground, 1 tbsp
Preheat oven to 350 degrees. In a bowl, combine 8 oz. raw Italian turkey sausage, 1 cup cooked barley (that's cool enough to handle), 1/2 onion, diced, 1/2 cup diced (or fresh) tomatoes, garlic to taste, 1/2 cup frozen spinach, thawed, and salt and pepper to taste. Cut two green bell peppers in half, cutting down from the stem. Take out the seeds and rinse clean. Fill each of the four halves with the mixture and place on a baking sheet or in a casserole dish. Bake for about 45 minutes or until turkey is completely cooked, bell peppers are softened and all ingredients are cooked through. You may wish to sprinkle mozzarella cheese on each of the pepper (not included in nutrition facts). Enjoy!

You must have used GIANT peppers! I had enough to stuff three peppers and there's still some filling left in the mixing bowl!
The recipe was pretty good, but the filling didn't quite have the consistency I expected it to. Next time I think I might use rice instead of barley, or add cheese. - 4/8/10
